Baby Quiche

One of Emma’s favorite evening activities is to watch mommy and daddy scramble to prepare and eat their meals.  If she allows for it, they can even enjoy them.  During the penitential season of Lent, we try to eat healthy and meatless on Fridays.  Here’s a classic from Monique’s kitchen, inspired by Grandma Linda:  spinach leek quiche with gruyère cheese and a brown rice crust.  No crying?  Baby approves!
